Codfish in Black Bean & Garlic Sauce (豆豉醬銀鱈魚)

Ingredients:

Codfish 285g, Red Pepper 30g, Sliced Ginger 1 pc, Green Onion 3 tbsps

Marinade:

Pepper to taste, Corn Starch 2 tsp

Seasoning:

Amoy Black Bean and Garlic Sauce 1 tbsp, Sugar 1 tsp, Water 4 tbsp, Corn Starch 1/2 tsp

Method:

1. Rinse codfish, drain well and then marinate.
2. Heat the pan with oil, add in ginger and fry the fish until browned, dish up.
3. Stir-fry red pepper and add in seasoning until boiled. Add in green onion and pour the sauce onto the fish and serve.

材料:

銀鱈魚 1塊 285克、紅椒粒 30克、薑 1片、蔥 粒 3 湯匙

醃料:

胡椒粉少許、粟粉2茶匙

調味料:

淘大蒜蓉豆豉醬1湯匙、糖1茶匙、水4湯匙、粟粉1/2茶匙

做法:

1. 銀鱈魚洗淨抹乾,加入醃料拌勻。
2. 燒熱油,爆香薑片,放入銀鱈魚煎至金黃色,上碟。
3. 爆香紅椒,加入調味料煮滾,再放入葱粒,淋在魚上。
